Homespun things...Home made bulk pancake mix and gluten free too....

 
 

Don't buy pancake mix.
 
It's the easiest thing ever to make up yourself.
 
I noticed that a friend had posted her own version of this recipe on social media, amidst great excitement that one could actually make their own pancake mix.
 
Well, like most things, of course you can.
 
And it's a no-brainer if like us, you need your pancake mix to be gluten free.
 
Here's my version, shared on a money saving forum over eight years ago.
 
I inherited it from a friend, who cleverly, also taught me to package it as a gift.
 
As a gift, the mixture goes into a ziplock bag and wrapped, tied with kitchen twine or ribbon, with a cute measuring cup attached, and presented with a metal spatula (which really helps in flipping the pancakes), and a cute apron. 
 
A fabulous gift for under $10 if you're clever about it. Daiso is a great source of the accoutrements for that idea. And of course the 'measuring' cup can be anything. Because so long as the proportions of the ingredients are maintained, the 'cup' can be any size. I recently used this one for a gift.
 
 
 
So here's the recipe:

 6 cups plain flour (gluten free works fine)
2 tablespoons baking powder
1 teaspoon salt
1 cup milk powder
3 tablespoons sugar
 
Combine well in a large bowl, and decant into a ziplock bag or large jar. Make sure you keep the instructions close by, and for gifting, print them out and attach them.

 Method for making 7-10 pancakes:

 Mix together the following lightly -

1 1/2 cups pancake mix
3/4-1 cup water
1 egg
2 tablespoons oil

Cook in a non-stick frypan over a medium-high heat.
 
Yummy.

  1. You do have some good ideas, Mimi. I don't think I have ever bought packet pancake mix. I mean...really? They are so easy to make. Mind you, I don't indulge these days as it is too easy to put on weight when you get older.

    1. I know Chel. It's just another result of supermarket brainwashing. I mainly make this for daughter and her friends so they can rustle up a quick snack or breakfast :) You wouldn't believe the price of the very ordinary gluten free version! Mimi :)

  3. I agree, it's one of the simplest recipes to make (along with scones and pikelets and muffins). I have never used a measure though, as I'm an intuitive cook, and just add what I have until it 'feels' right. I suppose having seven children and a need to use what was in the cupboard rather than buying more ingredients developed that intuitiveness. Of course, those same children ask for my recipes now so occasionally I make a note of what I use and how much and add it to our Family Recipe Book.

  4. I do sometimes buy pancake mix but have noticed that it does have undesirable ingredients. This is so much smarter.

  5. These are wonderful. I have heard of people buying pancake mix and wondered why! Also everyone says how expensive GF things are and GF flour isn't expensive and substitutes really well! These look DELICIOUS and so useful too. Big budget helpers!xxx

  6. Yum, pancakes.
    I never have any luck using only GF flour - it goes gluggy for some reason - so I tend to use half GF/half Buckwheat Flour. I shall make up a bulk mix to keep in the pantry too I think. Thank you Mimi for inspiration yet again. Ahlyia

  7. I'm was guilty yesterday. Because I thought crepes must be better than pancakes, I bought a packet French style crepe mixture and proceed to eat for breakfast. Disappointed reigned supreme , so this morning I returned to my usual sourdough and buckwheat pancakes and for a difference, strained kefir milk instead of soured milk. Light, fluffy and tasty. Sometimes you have to be disappointed to appreciate what you have! Erin
