Wicked Winter Breakfast....Baked Apple...

I thought it was worth reproducing this post from over four years ago, as aside from cakes, bohemian decorating tips, and tips for going gracefully grey, it has the most views of any post since I started my blog. A baked apple. Who'd think??? Thousands of views. Go figure. And thankyou to whoever keeps looking at my humble baked apple....lol!

So here it is from 2011....

This luscious looking baked apple with home made greek yoghurt was my breakfast this morning. I prepared it last night, left it in the refrigerator, and just had to pop it into the oven for 30 minutes to bake before consuming with relish. That's figuratively speaking, there was no relish on the side of my plate!

If you've only ever thought of baked apple as a dessert, now's the time to review that idea. It's fruit, it's healthy, and it's tasty. Not for me the smoothies and mueslis favoured on cafe menus. Not at this time of the year. This is so easy, you'll want one for brekky every day.

You'll need:

One small apple. Mine was a Royal Gala, about the size of a tennis ball or a little smaller.
2 teaspoons dried mixed fruit of any kind. I just used commercial mixed fruit.
A large pinch of almond slivers or flaked almonds. You could also use coconut, macadamias or any other nut you fancy.
A large pinch of cinnamon.
1/2 teaspoon local organic honey.
1 large tablespoon thick drained Greek yoghurt for serving.

Then just:

Wash and dry the apple and core it. I have an apple corer for this but you can easily do it with a sharp knife, but cutting a square around the stamen, then running a sharp knife all the way through the apple top to bottom, using the square as a guide. You should then be able to just push the core out, leaving you with a tunnel down the middle of the apple.

In a small bowl, combine the dried fruit, almond flakes, cinnamon and honey.

Using clean fingers, push this mixture into the tunnel of the apple. If preparing the night before, you can now refrigerate your apple.

Preheat the oven to 180C and put your apple on a lined baking tray. Bake for approximately 20-30 minutes depending upon how firm or squishy you like your apple.

When cooked to your liking and oozing juice and honey, remove to a serving plate and enjoy with yoghurt on the side.

Very yummy.

    1. Yes, it's Baked Apple weather here for sure. The honey adds another flavour dimension which I'm sure you'll love and I know you're a believer in the healing effects of local honey, so how can you go wrong? Mimi xxx

  2. I had already planned baked apples for dessert tonight, i wouldn't have thought to have them for breakfast. As I don't really like honey I use golden syrup instead, or butter and brown sugar.

  3. Mimi, I am seeing baked apples on a few blogs lately. It is certainly the time of year for them isn't it? Now I will just have to adjust my ingredients that I push down into the 'tunnel' seeing as I can't eat dried fruit anymore. I can add nuts though so I might crack a few of our macadamias if the cockys have left me a few :-)

  5. Mimi,

You're SO right-- easy peasy. Never heard of "brekky" before to refer to breakfast! Love that! Cute! And a baked DELIGHT to start off your day. Wonderful idea!

I had to stop eating dried fruit (too high in sugar) but nut meats would be good, and made with honey or pure maple syrup, au natural and nutritious! Love this!

    Hugs and happy highways,
    Kelley~

  6. Morning Mimi,
It was so nice to see you came by during the night (for Me anyway, don't know what time
it was for you!! lol Always such a delight to hear from you. Loved your advice for the
teenager....I couldn't agree more, and the grandchildren, oh my, they bring a joy that
was just so unexpectedly precious. It is amazing how you love them as much as your
own children if not more........it is wonderful not to have all that responsibility of raising them, so you can just enjoy them mostly.

This recipe sounds so yummy. My sister-in-law makes baked apples and she usually
makes them for us for Christmas brunch and they have a batter on them, and they
are some good eating.........so I can only imagine how good these are. Gonna have
to copy the recipe for Fall..........as we are in the midst of summer here and that is
a more Fallish/Winter recipe for me..........lol Course, I know that you are in the midst
    of Winter there...........

I just noticed that Annabel said she hoped you were feeling better, so.......have you
been sick too??? I am going on my 4th week, and hoping this stuff is gonna totally
clear up soon. I feel fine, I am just still coughing at times and get tired quicker than
usual, but just think it is the nature of the virus from what I have heard. Will be praying
for you and hope you feel much better soon if not already, with whatever is plaguing you hon.
    You have a delightsome day...........
    Blessings, Nellie

    1. Hello Nellie my dear! Yes the grandchildren are the sweetest thing ever, aren't they? Battered baked apples...oh my goodness...I can't imagine. Delish for sure! And guess what. We eat these cold in Summer, and they are just as divine! I am recovering from a virus too. Nasty thing. I could do nothing at all for several days. Not even blog! Thankyou for your prayers. You are in mine as well. Mimi xxx

  8. Oh delicious! I LOVE apples. I usually have at least two apples a day; I love them so!

I will definitely be making this soon. Another idea is to put almond butter (or another nut butter) and honey on the apple at the end of it baking. Everything melts, gets warm, and becomes this ooey, almond buttery, apple-ly deliciousness! When I make it, I make it for dessert.

But- you have inspired me... BREAKFAST, here I come!!

But the delight was to see what is in it - it's all something I can eat (being on a very restrict diet for health reasons). And I'm with you on Royal Gala apples...they are my favorite!
